These sweet fruity blackberry slices are the perfect summer dessert. Whether at a picnic or with your afternoon coffee - this simple and uncomplicated fruit cake should not be missing anywhere. Baked with our MANI lemon olive oil - which gives the slices a fruity, tart flavour. Enjoy!
Cream the eggs, ricotta, sugar and vanilla extract. Slowly mix in the olive oil. Mix the flour with the baking powder and fold into the mixture. Stir in the rum and finally carefully fold in the blackberries.
Spread the dough on a baking tray lined with baking paper and spread the blackberry jam on top.
Bake in the preheated oven at 175°C top/bottom heat for 30-35 minutes.
Leave the cake to cool and decorate with icing sugar and blackberries.
Depending on the season, raspberry, redcurrant or blueberry can also be used for the slices. You can also use MANI extra virgin olive oil, Selection - then simply add the zest of 1/2 an organic lemon.
