Mix all the ingredients for the loukoumades into a sticky dough and leave to rest, covered, for 1 hour.
In the meantime, we can make the chocolate cream. To do this, heat all the liquid ingredients and melt the chocolate in it. Add the vanilla extract and almonds and mix well. Refrigerate the chocolate cream until ready to use.
For the loukoumades, heat olive oil in a saucepan to 160°C. Have a spoon and a bowl of water ready.
When the olive oil has reached temperature, take some dough in your hand and squeeze it until a ball of dough comes out between your thumb and forefinger. Dip the spoon into the water and use it to remove the ball of dough and carefully place it in the hot oil. Continue in this way until all the dough has been used up.
Fry the loukoumades until golden brown and place on a piece of kitchen paper to drain.
Pour the chocolate cream into a cake syringe with a doughnut nozzle and fill the loukoumades with it. Sprinkle with icing sugar if desired.
