Mediterranean orzo salad

Summer, sun and salad - this orzo salad is light and wonderfully Mediterranean. For a picnic, a quick lunch or as a side dish for a barbecue - there are many ways to enjoy this salad all summer long. 

Ingridients:

• 225 g Orzo Pasta
• 1 pepper, diced
• 1 medium cucumber, diced
• 200 g cherry tomatoes, halved
• 150 g feta or vegan feta, diced
• MANI Kalamata olives ial naturale, pitted, halved
• MANI sun-dried tomatoes in olive oil, diced
• MANI capers in olive oil
• Fresh basil, chopped​

Dressing:

• 6 tbsp MANI extra virgin olive oil, Selection
• 2 tbsp lemon juice
• 1 tsp maple syrup, agave syrup or honey
• Salt
• Pepper​

For a vegan version, simply swap the feta for a plant-based alternative – that way, the orzo salad stays Mediterranean and fully plant-based.
